February 2016: Red Mountain Cabernet Sauvignon

Shaw Vineyard, on the Northern edge of the esteemed appellation now named “Red Mountain,” is the home to this outspoken Sauvignon.  Now famous for development for tannic character, with rich dark fruit balance, Red Mountain is home to a number of Washington state’s most prestigious wineries.  Marvelous dark ripe fruit and spicy oak on the nose. A sip reveals warmth and complexity, blackberry.  The tannins dry but not gripping and a glowing finish!

Food Pairing:
Full flavored red meats, smoked or grilled. Cheeses include: Blue Cheese, Cheddar, Dry Jack, Gouda, Gruyere, Monterey Jack, Parmesan, Sheeps Milk Cheeses

This fruit was fermented at optimum ripeness and aged in Bulgarian, French and American Oak Barrels for the full 19 months. The wine was bottled after crossflow sterile filtration, on  May 24, 2014.  Spicy, complex oak on the nose, rich with dark fruit flavors and a notable, but subtle tannin component. Lingering finish. A classic wine that is both wide and long.

April 2016: Coles Collage

Estate wine. Bright red berry on the nose, Layered cherry, berry, plum, and mocha palate. Lingering cherry finish gaining complexity with bottle aging.

Food Pairing:
Subtle accompaniment to pot roast or stew. Cheeses include Gruyere, Fontana, Brie, Camembert.

Specification: A field blend of 6 varieties from a small corner of our Needlerock vineyard.  Cinsault 29%, Zinfandel 18%, Mouvedre 17%, Petit Verdot 13%, Counoise 12%, Grenache 11%. Barrel aging 18 months in French and American Oak Barrels. A tribute to our grandson, Cole. Alcohol 15.1%
